About the Company
Chuy’s was established in 1982, in Austin, Texas when founders Mike Young and John Zapp decided to turn an old abandoned Texas barbecue joint on Barton Springs Road into a Mexican food restaurant. The two spent all but $20 of their money in order to get their restaurant open.
What remained of their initial investment was then spent on decor. Young purchased two velvet paintings, one of Stevie Wonder and another of Elvis Presley, and decided that the walls were done. For flooring, they decided to collect tiles of different colors and lay them out as if they planned it that way. It worked.
In no time, Chuy’s was serving affordable Mexican food that was fresh and tasty. The menu featured family recipes from South Texas, New Mexico, and Mexican border towns, and each dish was specifically created to offer a taste of home.
Interestingly, customers also started bringing in their own Elvis memorabilia. Within a few short months, the owners found that their restaurant had grown to include a veritable Elvis shrine. Chuy’s embraced the pop icon and essentially made him the company’s patron saint.
Each year on the 8th of January, which is Elvis’ birthday, most Chuy’s restaurant locations host the Elvis Birthday Bash, during which an Elvis Presley impersonator visits the restaurant and performs on stage. This annual event is one that is eagerly anticipated by faithful fans of the legendary pop icon.
Chuy’s introduced the nacho car bar concept when it opened its second location on North Lamar Boulevard. Young happened to be a fan of classic cars, and thought that it would be fun to serve food from the trunk of a 1957 Bel Air or an old Cadillac.
The company also annually hosts a Green Chile Festival at its locations, which celebrates the harvest of the Hatch Green Chiles from Hatch, New Mexico. The chain’s official mascot, Chuy the Redfish, was born from a t-shirt that was designed by a local Austin artist.
Today, Chuy’s has 51 locations all spread across 12 states, and plans to open more locations in the South.
