About the Company

One sandwich made all the difference in Schlotzsky’s rich and colorful history. In 1971, Don Dissman and his wife, Dolores, opened a small restaurant on South Congress Avenue in Austin, Texas. The restaurant’s first menu featured a Muffuletta-like sandwich that had a combination of premium meats, cheeses, and marinated black olives served on hot sourdough bread.

The sandwich was aptly named “The Original”, and it became an instant hit among the restaurant’s faithful and hungry customers. It had become so popular that, within ten years, Schlotzsky’s was able to open more than 100 franchise locations. This iconic signature sandwich can even be seen on the menu today.

Schlotzsky’s was then purchased by real estate investors Gary Bradley and brothers John and Jeff Wooley, for approximately $3 million. In 1982, Bradley left in order to focus on his real estate business, giving the Wooley brothers shared ownership of the company.

Under the leadership of the Wooley brothers, the Schlotzsky’s expanded its menu to include paninis, toasted wraps, gourmet pizzas, fresh salads, soups, and other tasty food items. The Wooley brothers also made the decision to take the company public in December of 1995.

The restaurant chain was at the peak of its success in 2001, when it operated more than 750 locations. Two years later, however, sales started plummeting, eventually resulting in the board of directors’ decision to relieve the Wooley brothers of day-to-day management responsibilities. The brothers resigned in 2004.

Schlotzsky’s ceased public trading soon after, and the Bobby Cox Companies took control and ownership of the company. For the next few years, Schlotzsky’s concentrated on its franchising operations, while also undergoing a major restructuring.

In November of 2006, the company was acquired by Roark Capital Group affiliate FOCUS Brands, whose list of subsidiaries includes prominent names such as Carvel, Cinnabon, and Auntie Anne’s. Under the new management, the restaurant chain started a massive remodelling of all its locations, featuring designs that had bright, bold colors, circle-themed furniture and decor, and playful slogans

Today, Schlotzsky’s operates more than 350 franchised and company-owned locations across 36 states and four countries.
